WinTan Ch istant
Cherry instant Tannin
WinTan Ch consists of ellagic tannins extracted from cherry tree. It comes in microgranules of brown color, soluble in water, with moderately astringent taste and with typical notes of cherry wood.
WinTan C istant
WinTan C is a compound of ellagic tannin made by aqueosus extraction from chestnut (Castanea Sativa).
It’s an instant microgranular formulation, brown color, soluble in water, with moderate astringent taste. The content of tannin is higher than 75%.
WinTan C is suitable for chromatic stabilization of red wine, by protection effect on anthocyanins from oxidation.
WinTan G istant
WinTan G is an oenological tannin by ether extraction from heart of gall (Quercus infectoria).
Non toxic dissolvents are employed for the extraction; only the purest fractions are extracted.
WinTan G is an instant microgranular formulation, of yellow cream colour, soluble in water and in hydroalcoholic solution, with a tannic taste. The content of tannin is higher than 94%.
WinTan G is reactive with proteins in solution, throwing down them. For this peculiarity and its low organoleptic impact WinTan G finds its natural application on white and rosè wines. It can be used by itself or associated with gelatin.
WinTan Q istant
WinTan Q is an oenological tannin extracted from quebracho wood (Schinopsis lorezii).
It is composed of proantocyanidine and ellagic tannins. WinTan Q is an instant microgranular formulation, of brown colour, soluble in water and in hydroalcoholic solution, with an astringent taste and toasted coffee aroma.
The content of tannin is more than 92%. WinTan Q for its chemical structure (condensed tannin) is able to react with antocyanin in red wines, stabilizing colour during maceration. In case of grapes with unbalanced phenolic components (not ripe grape and/or with rot).
Win Tan Q gives the treated wine intensity and equilibrium. WinTan Q condensed nature renders it ideal also in sharpening to the aim reequilibrate and/or to improve the phenolic component.
WinTan VR.i istant
WinTan VR.i is obtained by aqueous extraction of proantocyanidic and ellagic tannin at medium molecular weight, with a very similar structure to those of grape tannins.
It’s an instant microgranular formulation, with a brown colour and soluble in water.
The content of tannin is higher than 80%. WinTan VR.i is strongly indicated for the treatment of red grapes to improve their colour; thanks to its ellagic-condensed combination prevents over rates of tannin’s risk.
WinTan RS.f
WinTan RS.f is extracted with a hydro-solution of ellagic tannin. It’s indicated for high quality grape fermentation.
WinTan RS.f is a powder formulation, of brown color and soluble in water. The content of tannin is higher than 72%.
For its high antioxidative power and its ability to regulate redox potential of wine, WinTan RS.f is perfect during fermentation or in the first phase of fining to prevent or eliminate the rising of reduction, allowing also an adequate evolution of polyphenols.
Used in barrique it allows to integrate ellagic tannin’s contribution to wine, above all when barriques or barrels give not much.
